  • 12 ounces chicken or turkey
  • 1/4 cup soy sauce
  • 1/4 cup fruit juice (or vinegar)
  • 1/2 cup sugar
  • Nori sheets (cut into halves or thirds)
  • 6 cups cooked sushi rice
  • Optional: furikake (Japanese seasoning)

Instructions

  1. Slice the chicken or turkey into 8-10 pieces and marinate in a mixture of soy sauce, fruit juice, and sugar for at least 15 minutes.
  2. Cook the marinated protein in a skillet over medium heat until crispy on both sides.
  3. Lay a strip of nori on a cutting board and place a musubi mold on top.
  4. Press 6 cups of cooked sushi rice into the mold to form an even layer.
  5. Add a slice of the cooked protein on top of the rice.
  6. Fold the nori over the filling and seal with a bit of water if necessary.
