  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 slices cooked Turkey Bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • 1/4 cup pickled jalapeños
  • 2 brioche buns, toasted
  • 1/4 cup mayonnaise
  • 1 tbsp adobo sauce (from canned chipotles in adobo)
  • 1/2 tsp lime juice

Instructions

  1. Flatten the chicken breasts to an even thickness and season with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat your grill to medium-high heat and cook the chicken for about 4–5 minutes per side until they reach an internal temperature of 165°F. Add cheese during the last minute of cooking.
  3. In a bowl, mix mayonnaise with adobo sauce and lime juice.
  4. Toast the brioche buns on the grill or in a skillet until golden brown.
  5. Assemble the sandwich by spreading chipotle mayo on both sides of each bun. Layer with sliced avocado, grilled chicken with melted cheese, turkey bacon, and pickled jalapeños.
  6. Serve hot alongside your favorite sides.
