  • 2 tbsp olive oil
  • 2 chicken sausage or turkey sausage links (casing removed)
  • 3/4 cup yellow onion (diced)
  • 1/2 cup carrot (sliced)
  • 1/4 cup celery (sliced)
  • 2 tsp smoked paprika
  • 2 garlic cloves (minced)
  • 1 lb. yukon gold or red potatoes (diced)
  • 2 cups kale (stems removed)
  • 32 oz. chicken broth
  • 1 cup water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken sausage and cook until browned (about 5 minutes). Remove and set aside.
  2. In the same pot, add diced onion, sliced carrots, celery, minced garlic, and smoked paprika. Sauté for 2-3 minutes until softened.
  3. Stir in diced potatoes and kale, then pour in chicken broth and water. Mix well.
  4. Bring to a boil, reduce heat to simmer, cover, and cook until potatoes are fork-tender (about 15 minutes). Return the sausage to the pot.
  5. Season with salt and pepper to taste before serving. Garnish with fresh parsley.
