4 medium tortillas (flour, whole wheat, or gluten-free)
2 cups fresh spinach (chopped)
1 cup feta cheese (crumbled)
2 tablespoons olive oil or butter (for cooking)
1/4 cup sun-dried tomatoes (chopped)
1/4 cup black olives (sliced)
1/2 cup cooked grilled chicken (diced) – optional for added protein
Instructions
Heat a skillet over medium heat and sauté chopped spinach with sun-dried tomatoes and black olives until spinach wilts (about 2-3 minutes).
Assemble the quesadilla by sprinkling half of a tortilla with crumbled feta cheese, adding some spinach mixture on top, and folding it over. Repeat with remaining tortillas.
In the same skillet, add olive oil or butter if needed and cook each quesadilla until golden brown (approximately 3-4 minutes per side).
