  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1½ cups whole milk
  • ½ tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Salt, as needed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Prepare the Steak: Pat dry the steak and season with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the Steak: Heat a skillet until hot; sear the steak for 4–5 minutes per side. Let it rest for 5–10 minutes before slicing.
  3. Cook the Rice: Rinse rice under cold water. In a pot, heat olive oil and toast rice with garlic powder, then add broth and simmer until cooked.
  4. Make the Queso Sauce: In the same skillet, melt butter and sauté minced garlic. Gradually stir in milk and shredded cheeses until smooth.
  5. Assemble: Serve rice topped with sliced steak and queso sauce, garnished with cilantro and lime wedges.
