  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add beef belly pieces and sear until browned on all sides (5-7 minutes). Remove from pan.
  2. In the same pan, sauté minced garlic and sliced ginger for 1-2 minutes until fragrant.
  3. Return beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well.
  4. Bring to a boil, then reduce heat to low and let simmer uncovered for 1 to 1½ hours, stirring occasionally until beef is tender and sauce thickens.
  5. Adjust seasoning if needed, serve hot over steamed rice garnished with chopped green onions and sesame seeds.
