  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare the strawberry sauce by cooking strawberries, sugar, and lemon juice in a saucepan until soft. Mash and thicken with a cornstarch slurry. Cool.
  2. Preheat the oven to 325°F (160°C).
  3. Mix graham cracker crumbs, sugar, and melted butter for the crust; press into a springform pan and bake for about 8-10 minutes.
