  • 6 bell peppers (2 green, 2 yellow, 2 red)
  • 1 lb lean ground beef
  • 1 cup chopped yellow onion
  • 1 cup white jasmine rice
  • 2 cups beef or chicken broth
  • 21 oz salsa (mild, medium, or hot)
  • 1 tsp taco seasoning
  • 1 tsp cumin
  • 1 cup shredded Mexican blend cheese (divided)

Instructions

  1. Preheat oven to 375°F. Slice off the tops of each bell pepper and remove seeds.
  2. Roast the prepared peppers in a baking dish covered with foil for about 25 minutes.
  3. In a skillet over medium-high heat, sauté chopped onions until translucent. Add ground beef and cook until browned; stir in salsa, taco seasoning, and cumin.
  4. Mix in uncooked rice and broth; cover and simmer on low for about 15 minutes until rice is tender.
  5. Stir in half of the cheese into the filling. Stuff each pepper with the mixture and top with remaining cheese.
  6. Bake uncovered for an additional 15-18 minutes until heated through and golden on top.
