  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice (for basting)

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the hens under cold water and pat dry.
  2. Mix olive oil, salt, pepper, garlic powder, thyme, and paprika in a bowl; rub over each hen.
  3. In a skillet, melt butter and sauté onion, celery, and carrots until softened. Stir in bread crumbs and seasonings; add chicken broth until moist.
  4. Stuff each hen with the mixture, tie legs if desired.
