  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry the mini pumpkins. Cut off the tops and scoop out the seeds.
  3. In a pan, heat olive oil over medium heat; sauté diced onion and minced garlic until fragrant.
  4. In a bowl, mix ground beef, pumpkin puree, sautéed onion and garlic, spices, and herbs until well combined.
  5. Grease a baking dish with olive oil; place mini pumpkins upright. Fill each pumpkin with the stuffing mixture.
  6. Roast in the oven for 30 to 35 minutes until pumpkins are tender.
  7. Serve warm.
