  • 1 tablespoon olive oil
  • 2 cups bread flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon granulated sugar
  • 1 ¼ cups buttermilk
  • 8 tablespoons unsalted butter (melted then cooled – divided)
  • 1 teaspoon fresh rosemary (chopped)

Instructions

  1. Prepare the vegetables: Pulse celery, onion, carrots, thyme, sage, salt, and black pepper in a food processor until finely chopped.
  2. Sauté the mixture: Heat olive oil in a skillet over medium heat; cook the processed vegetables for about 10-12 minutes until softened.
  3. Preheat oven to 425°F.
  4. Mix dry ingredients: In a bowl, whisk together bread flour, baking powder, baking soda, sugar, and salt.
  5. Combine wet ingredients: Whisk buttermilk and melted butter in another bowl until smooth.
  6. Form the dough: Add wet mixture to dry ingredients; stir until just combined. Fold in cooled vegetable mixture gently.
  7. Shape the biscuits: Drop heaping spoonfuls of dough onto a lined baking sheet.
