  • 1 whole turkey (fresh, all-natural)
  • 1/2 cup melted butter
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 whole lemon, zested
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Add water to the bottom of a roasting pan.
  3. In a saucepan, combine melted butter, grape juice, and stock for basting.
  4. Mix softened butter with chopped herbs, lemon zest, garlic, and salt.
  5. Rub herb butter under the turkey skin and over the top.
  6. Stuff the turkey cavity with aromatics if desired.
  7. Dip cheesecloth in basting liquid and cover the turkey.
  8. Bake for approximately 2.5 to 3 hours, basting every 20-30 minutes.
  9. Remove cheesecloth 30-45 minutes before done cooking for browning.
  10. Let rest for about 15 minutes before slicing.
