  • 1 tablespoon sesame oil
  • ¼ cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 10 oz ground chicken
  • ¼ cup tamari (or soy sauce)
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (chopped)
  • ¼½ cup carrots (shredded)
  • 1 head butter lettuce (leaves separated)

Instructions

  1. In a pan over medium-high heat, warm sesame oil. Add diced onions and sauté until golden brown (about 2-3 minutes). Stir in minced garlic and ginger.
  2. Add ground chicken to the pan, breaking it apart with a spoon. Season with salt and pepper; cook until no pink remains (3-4 minutes).
  3. In a small bowl, whisk together tamari, Thai chili sauce, lime juice, and maple syrup. Pour over cooked chicken and stir in chopped cashews. Simmer for about two minutes.
  4. Remove from heat and mix in shredded carrots, scallions, and cilantro.
  5. To assemble each wrap, take a butter lettuce leaf and fill with the chicken mixture. Top with sesame seeds if desired.
