  • ½ pound turkey strips
  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear
  • 1 lemon
  • ½ cup parsley
  • Freshly ground black pepper

Instructions

  1. Peel and dice the pear, tossing it in lemon juice to prevent browning.
  2. In a skillet over medium heat, cook diced turkey strips until golden brown and crispy. Remove from the skillet and set aside.
  3. Add sliced shallots to the same skillet and sauté until softened, then stir in Dijon mustard.
  4. Mix in the frozen peas and diced pears, cooking until heated through.
  5. Fold in half of the turkey strips along with parsley and black pepper.
  6. Serve in a bowl topped with remaining turkey strips and garnished with lemon zest.
