  • 1 tbsp butter
  • 1 tbsp avocado oil
  • 500 g lamb (cut into bite-size chunks)
  • 2 brown onions (sliced thinly)
  • 1 heaped tbsp plain flour
  • 480 ml hot chicken or vegetable stock
  • 2 bay leaves
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 3 medium-sized carrots (cut into chunks)
  • 680 g potatoes (peeled and sliced)
  • 1 tbsp melted butter for brushing
  • 1/4 tsp dried thyme

Instructions

  1. Preheat your oven to 170C/325F.
  2. In a casserole or saucepan, melt butter and oil over medium heat. Brown the lamb for about 3-4 minutes, then set aside.
  3. Sauté sliced onions in the same pan for 3-4 minutes until soft.
  4. Return lamb to the pan and stir in flour. Pour in stock, add bay leaves, salt, pepper, and Worcestershire sauce. Bring to a gentle bubble, cover, and place in the oven for 30 minutes.
  5. After 30 minutes, stir in carrot chunks and transfer mixture to a dish if desired. Layer sliced potatoes on top.
  6. Brush potatoes with melted butter and sprinkle with thyme. Cover and bake for one hour.
  7. Increase oven temperature to 200C/400F, remove cover, and bake uncovered for another 30 minutes until golden.
