- 3 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 1 sprig curry leaves
- 1 onion, finely chopped
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Preparation:
- Make a vertical slit in each brinjal, taking care not to cut it in half.
- Heat a pan and dry roast peanuts, sesame seeds, coriander seeds, cumin seeds, fennel seeds, and dry red chilies until they turn aromatic.
