  • 8 small purple brinjals
  • For Stuffing:
    • 4 tablespoons roasted peanuts
    • 2 tablespoons sesame seeds
    • 2 teaspoons coriander seeds
    • 1 teaspoon cumin seeds
    • 1 teaspoon fennel seeds
    • 2-3 dry red chilies
    • 1 inch ginger, grated
    • 4-5 garlic cloves
    • 2 tablespoons grated coconut
    • Salt to taste
  • For Curry:
    • 3 tablespoons oil
    • 1 teaspoon mustard seeds
    • 1 teaspoon urad dal
    • 1 teaspoon chana dal
    • 1 sprig curry leaves
    • 1 onion, finely chopped
    • 1 teaspoon turmeric powder
    • 2 teaspoons red chili powder
    • 1 teaspoon garam masala
    • Salt to taste
  • Fresh coriander leaves for garnish

Preparation:

  1. Make a vertical slit in each brinjal, taking care not to cut it in half.
  2. Heat a pan and dry roast peanuts, sesame seeds, coriander seeds, cumin seeds, fennel seeds, and dry red chilies until they turn aromatic.
  3. Allow the mixture to cool down and then grind it along with ginger, garlic, and grated coconut to a fine paste. Add salt to taste and mix well.
  4. Stuff each brinjal with the ground peanut masala mixture and set aside.
  5. Heat oil in a deep pan and add mustard seeds, urad dal, and chana dal. Let them splutter.
