  • 45 medium zucchinis, sliced lengthwise
  • 500 g fresh spinach, cooked and chopped
  • Fresh basil leaves, chopped (to taste)
  • 240 g vegan ricotta
  • Vegan mozzarella cheese (for topping)
  • 1 tablespoon Italian seasoning
  • Pinch of salt (to taste)
  • 1 cup marinara sauce
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 200°C (400°F) for even baking.
  2. Cook spinach in a skillet over medium heat for 3–5 minutes until wilted; drain excess liquid.
  3. Slice zucchinis lengthwise into strips and bake them for 15–20 minutes with a drizzle of olive oil and salt until softened.
  4. In a mixing bowl, combine the cooked spinach, vegan ricotta, basil, Italian seasoning, and salt; mix until creamy.
  5. Spread marinara sauce on the bottom of a baking dish. Roll each zucchini strip with the spinach filling and place seam-side down in the dish.
  6. Top with more marinara sauce and sprinkle vegan mozzarella cheese on top. Bake for about 20 minutes until golden.
