  • 1 ½ pounds chicken breast (cut into cubes)
  • 1 cup diced onion
  • 5 cloves garlic (minced)
  • 1 tablespoon chopped jalapeño (approximately 1 jalapeño pepper)
  • 1 packed cup cilantro leaves (roughly chopped, divided)
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 4 (15.8-ounce) cans white beans (drained)
  • 6 cups chicken broth or stock
  • 16 ounces frozen corn
  • 2 (4-ounce) cans diced green chile peppers (undrained)

Instructions

  1. In a large pan over medium-high heat, heat 2 tablespoons of olive oil and sauté cubed chicken until golden brown (3-5 minutes).
  2. Reduce heat to medium, add remaining olive oil, diced onion, garlic, and jalapeño; cook until softened (about 5 minutes).
  3. Stir in half a cup of chopped cilantro and combine well before transferring to a large pot.
  4. Sprinkle in cumin, oregano, paprika, cayenne pepper, black pepper, and salt; mix thoroughly.
  5. Add drained white beans and chicken broth; stir well.
  6. Simmer on low heat for at least 30 minutes (up to 2 hours for deeper flavor).
  7. Stir in the sautéed chicken, frozen corn, and diced green chiles; simmer for an additional 10-15 minutes.
  8. Before serving, fold in remaining cilantro for freshness.
