  • 3/4 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup chopped strawberries
  • 1/4 cup blackberries, chopped or mashed
  • 1 teaspoon lemon juice
  • 1/2 cup pure cane granulated sugar
  • 3 tablespoons peeled chopped pears (or 2 tablespoons pear puree/sauce)
  • 1/4 cup plain unsweetened applesauce
  • 2 tablespoons cornstarch
  • 2 cups all-purpose flour (or gluten-free)
  • 1/2 cup oat flour (blend 1/2 cup oats in blender for flour)
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1/2 cup cold water
  • 12/3 cups powdered sugar
  • 2 to 4 teaspoons milk
  • Neon violet and sky blue food gel color

Instructions

  1. Prepare the filling: In a saucepan, mix berries, lemon juice, sugar, chopped pears, applesauce, and cornstarch. Cook on medium heat until thickened.
  2. Make the dough: Combine flours, sugar, and salt in a bowl. Cut in cold butter until crumbly; add cold water until just combined.
  3. Roll out dough: Divide and roll one half to about 1/8 inch thick; cut into rectangles.
  4. Assemble: Spoon filling onto half of the rectangles and top with another rectangle. Seal edges with a fork.
  5. Bake: Preheat oven to 350°F (175°C). Bake pop-tarts on lined sheets for about 25 minutes until golden.
  6. Decorate: Mix powdered sugar with milk for icing; drizzle over cooled pop-tarts.
