  • 3 medium-sized zucchini (sliced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup crispy fried onions
  • 1/2 cup freshly shaved parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat a sauté pan over medium-high heat. Add sliced turkey bacon (or an alternative) and cook until crispy. Remove and set aside.
  2. In the same pan, add zucchini slices, cooking for 5-8 minutes until softened. Drain excess grease if necessary.
  3. Stir in chopped sun-dried tomatoes and cook for an additional 5 minutes.
  4. Add half of the parmesan cheese and crispy bacon back to the pan, mixing well. Season with salt and pepper as needed.
  5. Top with remaining parmesan cheese and crispy onions before serving hot.
