  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • ½ teaspoon ground cinnamon (for coating)
  • ½ cup confectioners’ sugar (for glaze)
  • 1 tablespoon reduced cider (for glaze)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it reaches about ¼ cup. Set aside to cool.
  2. In a bowl, whisk together flour, cinnamon, baking soda, ground cloves or allspice, and salt.
  3. Cream butter and sugars until fluffy; mix in egg, vanilla extract, and cooled reduced cider.
  4. Gradually incorporate dry ingredients until just combined.
  5. Chill dough for 30 minutes.
  6. Preheat oven to 350°F (175°C). Prepare a baking sheet with parchment paper.
  7. Roll chilled dough into balls, then coat in cinnamon sugar before placing on the baking sheet.
  8. Bake for about 10 minutes until edges are set; cool slightly before transferring to a wire rack.
  9. Drizzle glaze over cooled cookies before serving.
