  • 1 Tablespoon lemon juice
  • 3/4 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • 8 egg roll wrappers
  • Vegetable oil, for frying
  • Whipped cream or caramel sauce (optional)

Instructions

  1. In a medium saucepan over medium-high heat, combine diced apples, lemon juice, cinnamon, and sugar. Cook until soft.
  2. Mix cornstarch with water in a small bowl; add to apple mixture. Bring to a boil, then simmer until thickened.
  3. Remove from heat, stir in vanilla extract, and cool completely.
  4. Prepare your workstation with water and a lined baking sheet.
  5. Place egg roll wrappers on a flat surface. Add about 1/4 cup of cooled apple mixture to each wrapper's lower third and roll tightly.
  6. Heat vegetable oil in a large pot to 360°F (182°C). Fry egg rolls until golden brown; drain on paper towels.
  7. Serve hot with whipped cream or caramel sauce.
