  • 7 cups sliced apples
  • 1 tablespoon fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 pie crusts
  • 1 tablespoon butter
  • 1 large egg
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 400°F (204°C) and adjust the rack to the lower third.
  2. In a bowl, combine sliced apples and lemon juice; toss well.
  3. In another bowl, whisk together granulated sugar, brown sugar, flour, cinnamon, and nutmeg. Pour over the apples and mix until well-coated. Let sit for 15 minutes.
  4. Roll out one pie crust into a 9-inch pie plate; refrigerate while preparing the second crust.
  5. Fill the first crust with apple mixture, dot with butter, then cover with the second rolled crust. Cut slits for steam.
  6. Brush the top with egg-milk mixture and sprinkle with coarse sugar if desired.
  7. Bake for 20 minutes at 400°F (204°C), then reduce to 375°F (190°C) and bake for an additional 35–40 minutes until golden brown.
  8. Cool completely before slicing.
