  • 1 ½2 pounds fresh cod
  • 1 cup all-purpose flour
  • ½ cup panko bread crumbs
  • 12 ounces light beef broth
  • 2 cups cole slaw mix
  • ½ cup chopped cilantro
  • 2 tablespoons lime juice
  • ½ cup mayonnaise
  • 2 cups canola oil
  • Corn tortillas

Instructions

  1. Prepare the citrus slaw by mixing cole slaw mix, cilantro, lime juice, and salt in a bowl. Set aside.
  2. Make the chipotle mayo by combining mayonnaise, honey, and adobo sauce in a separate bowl. Set aside.
  3. Slice the cod into pieces and pat dry.
