  • 2/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • ¼ teaspoon salt
  • ¼ cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ cup vegetable oil
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup Greek yogurt
  • 1 ½ cups fresh mixed berries (about 1 cup blueberries and ½ cup raspberries)
  • 6 oz. cream cheese (room temperature)
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon corn starch
  • ¾ cup powdered sugar
  • 1 ½ – 2 ½ teaspoons milk or cream

Instructions

  1. Preheat your oven to 425°F (220°C) and line your cupcake pan with paper liners.
  2. In a small bowl, stir together flour, sugar, and salt. Then add melted butter and whisk until coarse crumbs form. Set this mixture aside.
  3. In another bowl, mix softened cream cheese with sugar, corn starch, and vanilla just until combined.
  4. In a large bowl, stir together flour, baking powder, and salt.
  5. In a medium bowl, whisk together egg and granulated sugar until combined. Then whisk in yogurt, vegetable oil, and vanilla extract until smooth.
  6. Gently fold your wet ingredients into the dry ingredients until just combined.
  7. Fold in about half of your blueberries followed by half of your raspberries.
  8. Spoon about 1½ tablespoons of muffin batter into each lined cupcake cup. Create a slight dent in the center before adding about one tablespoon of cream cheese filling. Top each with reserved berries until filled about two-thirds full.
  9. Generously sprinkle streusel crumbs over each muffin.
  10. Place your muffin pan into the preheated oven but reduce the temperature to 350°F (175°C). Bake for about 30-35 minutes or until golden brown on top and set in the center.
  11. Let them cool in the pan for about 5-10 minutes before transferring them onto a wire rack to cool completely.
  12. While they cool down completely, prepare a simple glaze by stirring powdered sugar with milk or cream until desired consistency is achieved. Drizzle over cooled muffins just before serving.
