2 lbs boneless skinless chicken thighs, cut into cubes
3 tbsp cornstarch
1/4 cup vegetable oil (plus more as needed)
2 bell peppers, sliced
1 cup steamed green beans in a bag
1/2 tbsp garlic cloves, minced
1 tsp garlic powder
1 tsp crushed red pepper
1/8 tsp sesame oil
1 1/4 cup sweet chili sauce
Instructions
In a large bowl, combine diced chicken, oil, garlic powder, salt, pepper, and cornstarch. Mix well to coat the chicken.
Heat vegetable oil in a skillet over medium-high heat. Cook the seasoned chicken in batches until golden brown and cooked through; set aside.
In the same skillet, sauté sliced bell peppers until softened. Add minced garlic and cook until fragrant.
Return the chicken to the skillet along with steamed green beans, sweet chili sauce, sesame oil, ginger (if using), and crushed red pepper. Stir to coat and heat through.
