2 tsp. Italian seasoning
1 tsp. black pepper
1 tsp. garlic powder
3/4 tsp. smoked paprika
3/4 tsp. kosher salt
2 Tbsp. extra-virgin olive oil
Instructions
Start by combining the first ten ingredients—everything from chickpeas to salt—in a food processor. Blend until the mixture is cohesive and mostly smooth.
Using a small cookie dough scoop or measuring spoon, gather heaping tablespoons of the mixture and roll them into balls. You should end up with about 14 golfball-sized meatballs.
Heat olive oil in a large skillet over medium heat. Once hot, gently add your chickpea meatballs to the pan and cook for about 6 to 8 minutes, turning occasionally until golden brown on all sides.
