  • 1 1/2 pounds salmon fillets (skin removed)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon adobo sauce
  • 1 chipotle pepper (finely minced)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups fresh pineapple (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/2 jalapeño (seeded and minced)
  • 2 tablespoons fresh cilantro (chopped)
  • Juice of 1 lime
  • Pinch of salt
  • 8 small corn or flour tortillas
  • 1/2 cup shredded cabbage or lettuce (optional)
  • Lime wedges
  • Extra cilantro for garnish

Instructions

  1. Preheat your oven to 400°F or heat your grill.
  2. In a small bowl, whisk together the olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, salt, and black pepper.
  3. Coat the salmon fillets with the marinade and cook in the oven for about 12-15 minutes or grill for around 10-12 minutes until flaked.
  4. While the salmon cooks, mix diced pineapple, red onion, minced jalapeño, cilantro, lime juice, and salt in a bowl to create the salsa.
  5. Once cooked, flake the salmon into chunks and assemble tacos by placing salmon on tortillas topped with pineapple salsa.
