  • ½ cup finely ground Biscoff cookies
  • 1 tsp ground cinnamon
  • 6 large eggs, separated
  • ⅔ cup sugar
  • 1½ cups heavy cream (divided)
  • 1 can sweetened condensed milk (14 oz)
  • 1 can evaporated milk (12 oz)
  • ½ cup creamy cookie butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a bowl, whisk together cake flour, ground Biscoff cookies, cinnamon, baking powder, and salt.
  3. Beat egg yolks and sugar until fluffy; add vanilla extract and half a cup of heavy cream.
  4. Fold in dry ingredients gently. In another bowl, beat egg whites until stiff peaks form and fold into batter.
  5. Pour batter into the prepared dish and bake for 15-20 minutes until golden.
  6. Mix remaining heavy cream with sweetened condensed milk, evaporated milk, and warmed cookie butter.
  7. Poke holes in baked cake and pour milk mixture over it; chill overnight.
  8. Top with whipped cream mixed with powdered sugar and cinnamon; garnish with crushed Biscoff cookies before serving.
