  • 1 can (7 ounces) chipotle peppers in adobo sauce (use only the sauce)
  • 2 cans (15.25 ounces each) sweet corn
  • 1 can (15 ounces) pinto beans
  • 1 can (14.5 ounces) fire-roasted tomatoes
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup instant rice
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil (divided)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 teaspoons garlic (minced)
  • ¼ cup red onion (diced)
  • 1 medium jalapeño pepper (seeded and diced)
  • salt and pepper (to taste)
  • parsley (chopped, for garnish)

Instructions

  1. Pat chicken thighs dry, season with salt and pepper.
  2. Heat olive oil in a large pot; sear chicken for 2–3 minutes per side until golden brown.
  3. Add adobo sauce, ground coriander, cumin, and minced garlic; stir well.
  4. Incorporate sweet corn, pinto beans, fire-roasted tomatoes, and chicken broth; mix thoroughly.
  5. Return seared chicken to the pot and simmer for 25–30 minutes until tender.
  6. Shred chicken and return it to the pot; add instant rice and cook uncovered until tender.
  7. Stir in heavy cream; season with salt and pepper to taste.
  8. Serve warm garnished with chopped parsley.
