  • 4 cod fillets (about 6 oz each)
  • Salt and black pepper
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ¼ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice

Instructions

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.
  3. In another small bowl, mix together mayonnaise, Dijon mustard, and lemon juice.
  4. Brush one side of each fillet with the mayo mixture and press into the breadcrumb blend until fully coated.
  5. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  6. Lightly mist the air fryer basket with cooking spray. Place the coated fillets in a single layer in the basket.
  7. Cook for 10–12 minutes until golden brown and internal temperature reaches 145°F (63°C).
  8. Serve hot garnished with fresh parsley and lemon wedges.
