  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate chicken breasts in dill pickle juice for at least 30 minutes (up to 2 hours).
  2. Set up a dredging station with flour mixed with seasonings in one bowl, whisked eggs in another, and the breadcrumb-Parmesan mixture in a third.
  3. Pat the marinated chicken dry. Dredge each piece in flour, dip in eggs, then coat with breadcrumbs.
  4. Heat oil in a skillet over medium-high heat and fry coated chicken for about 5–7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  5. Drain on paper towels before serving.
