  • 1 1/2 cups mashed ripe bananas (about 3 bananas)

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups white chocolate chips
  • 1 1/2 cups heavy cream, whipped
  • 1/4 cup powdered sugar
  • 1 package (3.4 oz) instant banana pudding mix

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream softened butter with granulated and brown sugars until fluffy.
  2. Beat in eggs one at a time, adding vanilla and mashed bananas until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually combine with wet ingredients without overmixing.
  4. Fold in white chocolate chips evenly through the dough.
  5. Scoop tablespoon-sized dough onto lined baking sheets, baking for about 12-14 minutes or until golden around edges.
  6. While cooling, whip heavy cream with powdered sugar to soft peaks and fold in banana pudding mix.
  7. Once cooled, generously top each cookie with banana cream mixture.
