  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a bowl, mix mayonnaise, sour cream, lime juice and zest, dill, Dijon mustard, minced garlic, and salt. Chill.
  2. Boil water in a pot and cook shrimp for about 2-3 minutes until pink. Avoid overcooking.
  3. Prepare an ice water bath. Transfer cooked shrimp into the bath to stop cooking and cool.
  4. In a large bowl, combine cooled shrimp with diced cucumber, sliced green onions, and chilled dressing. Toss until well mixed.
