  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small onion, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir-fry sauce
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • 1/4 cup low-sodium chicken stock (or cold water)
  • 1/2 tbsp cornstarch

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl and setting aside.
  2. Bring a large pan of water to boil and blanch chow mein noodles for 20-30 seconds until loosened.
  3. Strain the noodles in a colander; do not rinse.
  4. In a large pan, heat vegetable oil over medium heat and sauté onions, cabbage, and celery for about one minute until softened.
  5. Push veggies aside in the pan, add another tablespoon of oil, and toss in noodles along with the prepared sauce.
  6. Mix thoroughly until noodles are well-coated and heated through.
