  • 7 large Granny Smith apples (peeled, cored, and sliced)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon lemon juice (plus zest of half a lemon)
  • 1 large egg (for egg wash)
  • Optional: 2 tablespoons sanding sugar

Instructions

  1. Prepare your pie crust by either making it from scratch or using store-bought. Chill the dough for at least an hour for optimal flakiness.
  2. Preheat your oven to 400°F (204°C).
  3. In a large bowl, mix together sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and zest until well coated.
  4. Roll out one pie crust into a circular shape and place it in your pie dish. Fill with the apple mixture.
  5. Roll out the second crust and cover the filling; seal edges and cut slits in the top for steam to escape.
  6. Brush with beaten egg wash and sprinkle with sanding sugar if desired.
  7. Bake for 25 minutes at 400°F then reduce temperature to 375°F (190°C) for another 30-35 minutes until golden brown and bubbly.
  8. Allow cooling for at least three hours before slicing.
