  • 1 lb shrimp (peeled and deveined)
  • 1 egg white
  • ½ tsp soy sauce
  • 1 cup cornstarch
  • Neutral cooking oil (for frying)
  • ½ cup coconut milk
  • 2 tbsp sweetened condensed milk
  • Pinch of salt
  • 2 tbsp mayonnaise
  • ¼ tsp vanilla extract
  • Freshly chopped green onions (for garnish)

Instructions

  1. If using frozen shrimp, thaw them completely, rinse under cold water, and pat dry. In a bowl, mix shrimp with egg white and soy sauce.
  2. Dredge shrimp in cornstarch until well-coated.
  3. Heat enough oil in a wok or deep frying pot over medium heat. Fry shrimp in batches for about 4–5 minutes until golden brown. Remove and place on a wire rack.
