  • 1 tsp grated lemon zest
  • 1 cup peeled, shredded zucchini
  • 1 cup confectioners' sugar
  • 1 1/2 tbsp fresh lemon juice
  • 1/2 tsp lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together flour, baking powder, and salt in a large bowl.
  3. In another bowl, cream softened butter and sugar until fluffy.
  4. Mix in egg and lemon zest until combined.
  5. Gently fold in shredded zucchini.
  6. Drop dough onto lined baking sheets about two inches apart.
  7. Bake for around 10 minutes or until edges are lightly golden.
  8. Prepare icing by mixing confectioners' sugar, lemon juice, and zest until smooth.
  9. Once cookies cool, drizzle or spread icing on top.
