  • 1 1/2 tsp fresh lemon juice
  • 1 Tbsp fresh lemon zest
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup softened butter (for frosting)
  • 4 cups powdered sugar
  • 1 dash salt (for frosting)
  • 1 Tbsp lemon zest (for frosting)
  • 2 Tbsp fresh lemon juice (for frosting)
  • 1 Tbsp milk (if needed, for frosting)

Instructions

  1. Prepare ingredients: Allow butter to soften at room temperature. Zest and juice two lemons.
  2. Cream the butter and sugar: In a mixing bowl, beat softened butter and sugar until light and fluffy. Add eggs, lemon juice, and zest; mix until well combined.
  3. Combine dry ingredients: Gradually add flour, baking powder, and salt. Mix until just combined—avoid overmixing.
  4. Shape the cookies: Roll tablespoon-sized dough into balls and place on lined baking sheets. Flatten gently with a sugared glass.
  5. Bake: Preheat oven to 350°F (175°C) and bake cookies for about 9-10 minutes until lightly golden on the bottom. Cool on the pan for a few minutes before transferring to a wire rack.
