  • 1/2 cup Unsalted butter (softened)
  • 1/2 cup Sugar
  • 1 Egg (room temperature)
  • 2 tsp Vanilla Extract
  • 1 tsp Almond Extract
  • 1 3/4 cups All-purpose flour
  • 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Cream of Tartar
  • 1/4 tsp Salt
  • 1/2 cup Funfetti sprinkles
  • 1 tbsp Heavy cream
  • 2 1/23 cups Powdered sugar
  • Food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream softened butter and sugar until light and fluffy. Mix in egg and extracts.
  3. In another bowl, whisk flour, baking powder, baking soda, cream of tartar, and salt. Gradually add to butter mixture.
  4. Fold in Funfetti sprinkles.
  5. Scoop tablespoon-sized portions onto prepared baking sheet, leaving space in between.
  6. Bake for 8 minutes or until lightly golden around edges. Cool on wire rack.
  7. For frosting, beat softened butter and vanilla until creamy; gradually add powdered sugar and heavy cream until smooth.
  8. Spread frosting on half of the cookies and sandwich with the remaining cookies.
