  • 3 pounds bone-in chicken thighs
  • â…“ cup olive oil
  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 2 tablespoons dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped parsley
  • 2 teaspoons kosher salt
  • 1 teaspoon lemon zest
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (sweet or smoked)

Instructions

  1. In a medium bowl, whisk together olive oil, water, lemon juice, Dijon mustard, soy sauce, honey, minced garlic, parsley, kosher salt, lemon zest, black pepper, and paprika.
  2. Reserve ¼ cup of marinade for basting later. Add chicken thighs to a baking dish or resealable bag with remaining marinade; coat well. Marinate in the refrigerator for 30-60 minutes.
  3. Preheat the grill to medium-high heat (375ºF to 400ºF). Clean and lightly grease grates.
  4. Shake off excess marinade from chicken and pat dry. Grill skin-side down for about 5 minutes before flipping; baste with reserved marinade each time you flip. Cook until internal temperature reaches 165ºF (74ºC), about 25-30 minutes total.
  5. Let rest for 5 minutes before serving.
