  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup honey
  • 1/2 cup honey (for glaze)
  • 1/4 cup brown sugar (for glaze)
  • 1/4 cup unsalted butter
  • 1 cup unsalted butter (room temperature)
  • 1 large jar vegan marshmallows cream
  • 3 cups powdered sugar
  • 1 tbsp milk (optional)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, mix eggs, oil, vanilla extract, sugars, milk, and honey until well combined.
  4. Gradually add the dry ingredients into the wet mixture and stir gently until just combined.
  5. Pour the batter evenly into the prepared pans and bake for about 25 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the glaze by melting honey and brown sugar together in a saucepan.
  7. Poke holes in the warm cakes and drizzle the glaze over each layer.
  8. For the frosting, beat together unsalted butter and vegan marshmallows cream until fluffy; gradually add powdered sugar until smooth.
  9. Once cooled completely, frost between layers and on top of the cake.
