  • 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • ¼ cup cornstarch
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil
  • â…“ cup soy sauce
  • â…“ cup water
  • â…“ cup light brown sugar, packed
  • 1 teaspoon sesame oil
  • 2 teaspoons garlic, minced
  • ½ yellow onion, diced
  • 2 large jalapeno peppers, sliced
  • Sesame seeds for garnish
  • Cooked white rice for serving

Instructions

  1. In a mixing bowl, combine chicken pieces with cornstarch, salt, and pepper until evenly coated.
  2. In another bowl, whisk together soy sauce, water, brown sugar, sesame oil, and minced garlic.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken pieces for 2-3 minutes per side until golden brown and cooked through.
  4. Remove chicken from the skillet. Sauté onions and jalapenos in the same pan for 4-6 minutes.
  5. Return the chicken to the skillet with the sauce mixture and stir well. Cook for an additional couple of minutes until flavors meld.
  6. Serve over white rice and garnish with sesame seeds.
