  • 1 cup fresh or frozen blueberries
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 can full-fat sweetened condensed milk
  • 6 tablespoons lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • 1 large egg yolk

Instructions

  1. Prepare the blueberry sauce by mixing cornstarch with lemon juice in a bowl. In a saucepan over medium heat, combine blueberries and sugar, mashing gently for three minutes. Stir in the cornstarch mixture until thickened.
  2. Preheat your oven to 350°F (177°C). In a bowl, mix melted butter, sugar, vanilla extract, and salt. Fold in flour until combined, then press into a tart pan.
  3. Bake the crust for about 15 minutes until lightly browned. Poke holes across the top while warm.
  4. Whisk together filling ingredients until smooth, pour into the crust, and swirl in blueberry sauce.
  5. Bake for another 17-19 minutes until just set. Cool completely before chilling for at least two hours.
