  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice (divided)
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz fresh mozzarella (or shredded firm mozzarella)
  • 2 tablespoons grated parmesan cheese
  • Freshly ground black pepper for seasoning

Instructions

  1. Preheat your oven to its highest setting (around 475°F or 245°C).
  2. Roll out your pizza dough on a lightly floured surface.
  3. Mix olive oil, water, parsley, garlic, lemon zest, 1 teaspoon lemon juice, salt, and pepper in a bowl.
  4. Spread this mixture over the dough evenly.
  5. Tear or slice mozzarella and scatter over the top.
  6. Bake on a baking sheet or pizza stone for about 15 minutes or until golden brown.
  7. Drizzle remaining lemon juice over the baked pizza and garnish with parmesan and parsley.
