  • 1 teaspoon granulated sugar
  • 1 (0.25-ounce) packet instant yeast
  • ½ teaspoon kosher salt
  • ¾ cup whole milk, warmed
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 2 tablespoons unsalted butter, melted
  • 6 tablespoons granulated sugar, divided
  • 1 cup whole milk for the pastry cream
  • 1 large egg for the pastry cream
  • 2 tablespoons cornstarch
  • ¼ teaspoon kosher salt for the pastry cream
  • 1 tablespoon unsalted butter for the pastry cream
  • ¼ cup passion fruit puree
  • ¼ teaspoon pure vanilla extract
  • Vegetable oil for frying
  • ¾ cup granulated sugar for coating

Instructions

  1. In a mixing bowl, combine the bread flour, granulated sugar, instant yeast, and kosher salt.
  2. Add warmed milk along with the egg and egg yolk. Mix until combined.
  3. Knead the dough on a floured surface until smooth.
  4. Place your kneaded dough in an oiled bowl and cover it with a clean cloth. Allow it to rise in a warm area until doubled in size.
  5. Prepare the passion fruit pastry cream by whisking together whole milk, egg, cornstarch, and salt in a saucepan over medium heat until it thickens. Stir in the butter and passion fruit puree.
  6. Once risen, punch down the dough and roll it out. Cut out circles and let them rise again while heating oil for frying.
  7. Fry each donut until golden brown on both sides. Roll in sugar while warm before filling with pastry cream.
