  • 2 c. organic baby spinach
  • 2 c. organic mixed leafy greens (including kale & chard)
  • 1/2 c. quartered marinated artichoke hearts
  • 4 oz. fresh mozzarella cheese marinated with extra virgin olive oil & fresh basil
  • 4 oz. olives jubilee (including Calamata, Nicoise, Picholine, & Amfissa)
  • 1 c. organic grape tomatoes
  • 1/2 c. pepperocini
  • 1/2 red onion (thinly sliced)
  • 1 c. water
  • 1/3 c. yellow onion
  • 13 garlic cloves (to taste)
  • 1/4 c. feta cheese
  • 4 tbsp. canola oil
  • 1/4 c. fresh lemon juice
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper

Instructions

  1. In a large bowl, layer the spinach, mixed greens, artichokes, mozzarella, olives, tomatoes, pepperoncini, and red onion.
  2. For the dressing, blend water, yellow onion, garlic cloves, feta cheese, canola oil, lemon juice, sea salt, and pepper until smooth.
  3. Drizzle the dressing over the salad and gently toss before serving.
