  • â…” cup sour cream
  • 3 tablespoons lime juice
  • 2 tablespoons taco seasoning
  • 1 (16-oz) bag tri-color coleslaw mix
  • 1 diced red bell pepper
  • 1 (10-oz) can drained Rotel diced tomatoes and green chiles
  • 1 (11-oz) can drained corn kernels
  • 1 (15-oz) can drained and rinsed black beans
  • 1 seeded and finely chopped jalapeño pepper
  • ½ cup chopped fresh cilantro

Instructions

  1. In a large bowl, combine the mayonnaise, sour cream, lime juice, and taco seasoning to create the dressing.
  2. Add the tri-color coleslaw mix, diced red bell pepper, drained tomatoes and chiles, corn kernels, black beans, jalapeño pepper, and cilantro.
  3. Gently toss until all ingredients are well coated with the dressing.
  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
