  • 1 tablespoon sugar
  • 1 1/2 cups warm water (about 110°F)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture, stirring until combined.
  3. Knead dough either by hand or using a stand mixer until smooth and elastic.
  4. Mix in chopped rosemary and grated parmesan. Form into a ball and let rise in a greased bowl for about an hour.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down dough, divide into eight pieces, flatten each piece, place mozzarella in the center, and shape into pretzel forms.
  7. Boil water with baking soda; dip each pretzel for about 30 seconds before placing on the baking sheet.
  8. Brush with melted butter and sprinkle with coarse sea salt.
  9. Bake for about 12-15 minutes until golden brown.
