  • 3 (4-ounce) bars semi-sweet or milk chocolate, finely chopped
  • 1 and 1/2 cups heavy cream
  • 6 egg whites, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 3/4 teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract
  • 3036 full-sheet graham crackers

Instructions

  1. Line an 8-inch square baking pan with parchment paper.
  2. To make the ganache, heat the heavy cream until simmering, pour over chopped chocolate, let sit for a few minutes, then stir until smooth.
  3. In a heatproof bowl over simmering water, combine egg whites, sugar, and cream of tartar; whisk until sugar dissolves (about 4 minutes). Add vanilla and whip on high speed until stiff peaks form.
  4. Spread some meringue at the bottom of the prepared pan; layer graham crackers, meringue, and ganache alternately until all layers are used.
  5. Cover tightly with plastic wrap and refrigerate for at least 12 hours.
  6. When ready to serve, add reserved meringue on top and lightly torch for a toasted finish.
